At Inter Continental Sanctuary Cove Resort we are looking for Head Pastry Chef to join our team.
Under the direction of the Executive Chef and within the limits of established Inter Continental Hotels Group Policies and Procedures, assists in the direction of all aspects of the Food Production and Stewarding operations. Promotes the core values around the Inter Continental Winning Ways both in terms of the branded guest experience for guests and the way we work with each other.
Your day to day

• Manage the resort Pastry Kitchen to achieve the optimum departmental profit meeting productivity targets
• Sets standards of all event food and equipment purchases in accordance with IHG guidelines.
• Actively support the Executive Chef participating in the preparation of the hotel's revenue plan and marketing programs.
• Plan for future staffing needs, recruiting, training, team building, in line with company guidelines.
• Conducts weekly meetings sharing information of hotel updates, HACCP, food cost, recognition and sharing general information.
• Help to plan special events and special food promotions.
• Oversee that outstanding culinary technical skills are maintained within the Pastry Kitchen
• Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
• Help develop popular menus offering guests value for money in accordance with IHG guidelines.
• Assist to manage labour costs of kitchen and stewarding according to forecast.
• Keep an up-dated Hotel Policies and Procedures file and up-date files on the following Food Production matters
• Assist to maintain consistency of first class food quality in all areas of food production.
• Assist Executive Chef to streamline key operational procedures.
• Maintain a high visible presence in the kitchen to ensure quality and consistency of product delivery.
• Demonstrate a sound awareness of OHS&W policies and procedures, ensuring the dissemination of information to all team members. Champion the identification and reporting of hazards, evaluation or risks, and design and implementation of hazard and control measures.
• Ensure all aspect of the HACCP standards, oversee and drive both in the kitchen and stewarding outlet.

What we need from you

• Certificate III Patisserie and/or Cakes and Pastry Qualification
• Strong interpersonal skills both written and verbal
• Ability to manage multiple tasks and conflicting deadlines
• Proven ability to adapt to varying situations
• There are physical requirements to this role.
