We are currently looking for a Sous Chef with a passion and dedicated attitude to maintain our high standard of food service.



The hotel has been awarded Great Place to Work for the second year in a row, as well as achieving Gold Level for Failte Ireland's Outstanding Employer Certification for 2024 and is in the top five luxury hotels in Dublin according to Travel & Leisure Magazine (2023).



Key Responsibilities:

  • Have a strong creative flare for food presentation and be able to bring new ideas to menu creation
  • Assisting the Head Chef and deputising in their absence
  • Maximise guest satisfaction by providing the highest food quality consistent within the relevant cost control margins of the hotel kitchen
  • Taking responsibility for the quality of the dishes and their prompt service
  • Ensuring outstanding attention to detail, encouraging a culture of high standards throughout the team.
  • Supervising the kitchen team and getting the best out of them
  • Monitoring the quality and progress of the work done by kitchen staff
  • Mentoring and develop junior team members
  • Taking responsibility for the mise en place and producing dishes
  • Maintaining stocks and ordering new, fresh produce, making efficiencies in food costs and wastage
  • Ensuring compliance with health and safety regulations, including HACCP
  • Ability to work under pressure at times with the culinary team and other food and beverage departments
  • Ensure readiness and compliance in case of last minute changes to reservations


The ideal candidate will have worked in a similar role before in a 4* or 5* property like The Fitzwilliam. They must also have a passion for cooking and be very creative. Our current Culinary team work closely together to ensure the best service and standards come from our kitchens and are looking for the right person to join this team.
