Assistant Restaurant Manager

Copper Bonnet is a bistro and bar located in Labuan Bajo, Komodo, NTT. We are known for our delicious craft cocktails, creative cuisine, and exceptional service and we’re looking for an Assistant Manager who can help us uphold our high standards. We cater to an international clientele with very high expectations and we’re looking for someone with an exceptional eye for detail and knowledge of service to help lead our team.
In this position, you will work closely with the General Manager to oversee the daily operations of the restaurant and partner with the Chef and Head Bartender to make sure our standards are being met. You will ensure that guests are satisfied with our product by overseeing the quality of service, resolving problems when they arise, and by keeping the restaurant organized through thoughtful scheduling and clear communication. You will ensure that all front-of-house employees understand their responsibilities and are performing them to our standards. You will partner with the Chef and General Manger to plan and price new menu items, ensuring that they meet the desired profit margins. You will contribute to tracking income and expenses and reporting financials on a daily, weekly and monthly basis under the supervision of the GM.

Responsibilities:
- Partner with the Chef and GM to create and price menus
- Create promotions that drive traffic to the restaurant while maintaining the desired profit margins
- Relay important information to the Chef and GM about guest needs, preferences, and sales trends
- Meticulously track income and expenses and be able to report on sales and profitability
- Ability to negotiate with suppliers for better prices and service; ability to find new suppliers when necessary
- Order beer, wine, and alcohol and manage shipping from Bali, Surabaya, and Jakarta
- Hire and train staff
- Motivate and mentor front-of-house and staff in order to provide high-quality service
- Create front-of-house and schedules to ensure appropriate staffing
- Create opening and closing plans and clearly communicate them to the staff
- Ensure staff perform as expected and remedy problems as needed
- Talk to customers to receive feedback on their service and understand how we can improve
- Willingness to relocate to Labuan Bajo, Flores (Komodo)
- Ability to speak English and Bahasa Indonesia
- 3-5 years of experience in a similar role
- Knowledge of restaurant point-of-sale software
- Excellent communication skills
- Excellent customer service skills
- Ability to motivate staff in a positive and effective manner
- Willingness to assist waitstaff and bar staff when necessary
- Ability to solve problems quickly and find a satisfactory outcome for all parties
