As the Scientist (Bakery & Snacks), you will have the opportunity to be part of our APAC Application & Technical Services Team to drive the technical service and application development/innovative formulation, process, and evaluation to support the continued growth of the Asia Pacific region.

The bakery and snacks categories include Bread, Cookies, Biscuits, Cereal bar, Pastry, Cakes, Donuts, Muffins, Wafer, Dry mixes, Extruded Snacks, Sheeted Snacks, Coated Nuts, Fillings, Fabricated chips, Half products, Glazes, Icings, and Toppings.


About You
We're looking to recruit a Scientist and you will focus on managing the Snacks category reporting to the Snr Technical Category Manager (Bakery & Snacks) based in Shanghai.

This is a role for a person who enjoys challenges, interacting with customers and experimenting with new ideas & creations in the lab. The incumbent should have a continuous learning attitude with a growth mindset.

This role requires you to work with teams based in APAC, and the Global Innovation Centre (based in Chicago).

What You’ll Be Doing

• Work independently with the application team members to develop snack formulas using T&L ingredients in customer-specific applications.
  
• Responsible for providing customers with technical support and recommendations including prototypes for our Food & Beverage Solutions (FBS) portfolio.
  
• Identify development opportunities within the customer base for Tate & Lyle ingredients.
  
• Able to recommend appropriate sweeteners, starches, and fibre solutions to existing and potential customers.
  
• Able to conduct pilot or commercial trials with customers to test the recommendation when required.
  
• Work closely with TS, Commercial, Marketing, and Business Development to align business goals with application efforts.
  
• Execute projects statistically and scientifically to ensure technical success.
  
• Communication of information on projects and product portfolio to internal and external customers.
  
• Ensure project information is stored in the project management tool (system and database) – salesforce.com
  
• Handle day-to-day maintenance of laboratory equipment, housekeeping of the laboratory and consumable replacements.
  
• To assist in the procurement of new snacks and bakery equipment by sourcing for suppliers and obtaining quotes
  
• Assist in setting up SOP for instruments and equipment.
  
• Prepare for customer presentations and ensure that requests are dealt with within the agreed timeframe.
  

Location
This role can be based in Singapore (Biopolis) OR Shanghai (Xuhui District).

What You’ll have
Degree in Food Science or related discipline

• 6-8 years of relevant work experience in food application in dairy/ beverages/ bakery & Snacks.
  
• Commitment to food & lab safety
  
• Knowledgeable of food ingredients functionality in various food applications and the critical processing parameters.
  
• Proficient at creating food formulation recipes.
  
• Able to troubleshoot problems for customers and give effective recommendations.
  
• Experience in handling food analytical instruments in the areas of rheology and sensory.
  
• Trained in handling lab process equipment e.g. dough sheeter, industrial ovens, noodle sheeter, dough mixers, etc
  
• Excellent presentation and communication skills
  
• Knowledge and/or experience with food speciality ingredients – sweeteners, modified starches, fibre, as well as hydrocolloids is a plus.
