Reporting to you: Café Supervisors, Café Assistants, Pastry Chef, Kitchen Porter, Barista, Kitchen Supervisor, Kitchen Assistant

The Highlights:
The Café Manager for Bluey’s World will play a crucial role leading the food and beverage operations in the venue with a focus on delivering positive memorable experiences for customers.
As a fast paced leadership position; the successful applicant will have a deep background in F&B and customer service with a strong ability to communicate, train team members and organise.
Initially this role will contribute to the coordination of the Food & Beverage build within the wider venue set-up internally and externally.
Key Responsibilities
Pre-Production Phase
- Work with Site Manager and Food & Beverage Planning Manager to set up the Service area correctly ensuring all components are operational on schedule.
- Coordinate with contractors to ensure the safe installation of Café and Kitchen appliances.
- Set up the F&B service areas, F&B storage areas, and F&B BOH.
- Unpack containers neatly to reduce any potential damages on equipment.
- Prepare staffing, training and workflow documentation.
- Assist with Recruitment
- Any other tasks as reasonably requested by the Site Manager / F&B Planning Manager to have the Café / Bar / Kitchen / Service Areas / F&B BOH functioning in time for venue launch.
Venue Operations:
- Oversee and coordinate operations within food and beverage related areas.
- Coordinate closely with the Kitchen Manager to deliver an excellent Food & Beverage offering.
- Lead and assist in the delivery of successful events and functions.
- Lead, train, and coordinate the functions of the F&B team, including supervisors.
- Follow all venue protocols and ensure the F&B team is doing the same.
- Adapt to evolving situations, think laterally, and problem-solve.
- Coordinate suppliers and deliveries. Ensure stock is delivered and stored safely.
- Administrate effectively, ensuring invoices, paperwork, logs and records, sensitive and private information are handled appropriately.
- Communicate constructively with other departments, liaise with venue leadership team and maintain awareness of key dates, times and operations throughout the venue.
- Communicate effectively on two-way radios.
- Attend weekly Head of Department meetings.
- Prepare and submit daily reports and end-of-season reports.
- Be familiar with, and adhere to, the Emergency Management Plan.
Staff Management and Training:
- implement staff onboarding procedures and systems.
- Deliver initial and ongoing staff training.
- Act and present in a professional manner.
- Communicate effectively.
- Sign in and out of Deputy, follow the roster punctually.
- Roster F&B teams in a timely manner.
- Ensure all staff are following their rostered start and finish times and receive breaks as per regulations.
- Call and follow up with late/absent staff, call in emergency staff if required. Adjust the roster as necessary.
- Check, adjust, and approve timesheets of all staff at the end of the day/shift/pay week.
- Ensure duties are fulfilled within allocated shift times.
- Ensure team are practicing food safe practices, intervene and train as necessary.
- Be a strong leader and example to staff. Contribute to a positive working environment
- Report and respond appropriately and proportionately to staff misdemeanours.
Compliance and Certification
- Hold a valid RSA certificate.
- Have conducted Responsible Management of Licensed Venues (RMLV) training.
- Hold Food Safety Supervisor certification.
- Ensure food & beverage presentation is of the highest consistent standard.
- Ensure all RSA, Food Safety, Health & Safety, OHS & SOP, and other state/federal government requirements are met by staff.
- Understand and implement all Liquor license details, conditions, and obligations.
Equipment Maintenance:
- Perform periodic inspections of all equipment.
- Ensure all Kitchen and Café equipment is functioning effectively and inform Site and/or equipment providers of any equipment safety risks or faults.
- Troubleshoot, maintain, and clean equipment including fridges, dishwashers and coffee machines.
- Implement correct cleaning schedules and procedures.
Inventory Management:
- Monitor storeroom, cool room, and alcohol storage access.
- Implement theft and loss prevention measures.
- Create and complete reorder forms/spreadsheets.
- Perform stock takes.
- Order stock and liaise with suppliers.
- Receive stock; ensure it is in good condition and quantities are consistent with the invoice.
Customer Service and Incident Reporting:
- Train staff in customer service excellence and lead on complaint management.
- Serve customers and assist staff with their duties.
- Maintain logs and write incident reports as required.
- Submit shift reports and respond to action points resulting from reports.
Technological Proficiency:
- Have access to a computer with Office and email and be proficient in its use.
- Have access to Deputy (rostering), Square, and Thrive (POS and Inventory) software. Receive training in its use and utilise efficiently.
- Adjust items on Square online for the management of stock and items.
- Set up and troubleshoot printers.
General Responsibilities:
- Represent AKM, HVK, Bluey's World, and all critical stakeholders.
- Adhere to appropriate dress codes for work during the build/maintenance phase and wear neat, smart clothing or supplied uniforms during the event phase.
- Adhere to Social Media Policy and Code of Conduct.
- Perform any additional tasks as reasonably fall within the scope of the role.
