According to the requirements of the SMEC and Market Supervision Administration for University canteen management, all the university in Shanghai must set up a full-time safety officer position. (Currently provided by catering vendor)
The establishment of this position fills the gaps in food safety regulations.
The main responsibilities include:
Food Safety Supervision (60%)
Food Safety Supervision
- Monitor and inspect all aspects of food handling in the cafeteria, including procurement, storage, processing, cooking, and serving, ensuring compliance with national and local food safety laws, regulations, and university policies.
- Regularly check the quality of food ingredients to ensure that all materials are fresh, safe, and meet relevant standards.
Hygiene and Environment Management
- Oversee the cleanliness and sanitation of the cafeteria, including the kitchen, dining areas, and storage rooms, to prevent food contamination.
- Inspect the personal hygiene of cafeteria staff, ensuring they adhere to hygiene standards such as wearing uniforms, masks, gloves, etc.
Food Safety Education
- Provide food safety training to cafeteria staff, promoting food safety knowledge and improving staff awareness and skill levels.
- Organize and conduct food safety-related training sessions and drills, ensuring employees understand emergency plans and procedures.
Food Safety Record Management
- Responsible for recording and managing food safety-related documents and archives, including food procurement logs, sanitation inspection records, temperature control logs, etc.
- Regularly summarize and report on food safety conditions, and propose improvement measures and suggestions.
Food Safety Inspections
- Conduct regular or random food safety inspections, identifying and correcting potential food safety hazards.
- Prepare for and manage inspections and audits by external agencies, ensuring the cafeteria meets all food safety standards.
Emergency Incident Handling
- Handle food safety emergencies in the cafeteria, promptly taking measures to prevent the situation from escalating, and reporting to relevant departments as per university regulations.
- Assist in investigating and resolving food safety incidents and manage follow-up actions.
Supply Chain Management
- Oversee the food supply chain, ensuring all suppliers meet food safety standards and regulations, and conduct supplier audits when necessary.
Regulation and Standard Updates
- Stay updated on the latest food safety laws, regulations, and standards, and promptly update the cafeteria management practices and procedures accordingly.
- Ensure that cafeteria management systems and operational procedures comply with the latest regulatory requirements.
Catering Service management (30%)
Support Daily Operations
- Assist in overseeing the daily operations of the cafeteria, including monitoring food preparation, customer service, and cleanliness.
Inventory Management
- Monitor stock levels of food, supplies, and equipment, assist in ordering inventory, checking deliveries, and ensuring proper storage of goods.
Customer Service
- Provide support in handling customer inquiries, complaints, and special requests, ensuring a positive dining experience for all patrons.
- Help implement customer feedback initiatives to gather insights for service improvement.
Menu Support
- Assist with menu planning by conducting research on popular dishes and student preferences.
- Work with the kitchen team to ensure that all menu items are prepared according to specifications and delivered on time.
Events support (10%)
- Help plan and execute special events, catering services, and themed meals by coordinating with various departments and ensuring all logistical details are handled.
- Ensure that events run smoothly, and help resolve any issues that arise during execution.
- Bachelor's Degree is needed.
- Relevant experience in facilities management is required;
- Relevant Sino-foreign cooperation university work experience is strongly preferred.;
- Catering service management experience is preferred.
- Proficient in English and Chinese, both in oral and written;
- Good at cross-cultural communication. Be aware of and respect the cultural differences;
- Hold strong passion to pursue long-term career development in Campus and Facilities management of international university;
- Outstanding communication and interpersonal skills, able to collaborate effectively with staff at all levels and management.
- Sharp insights into industry dynamics and trends, capable of formulating innovative food and beverage and food safety strategies.
- Possess appropriate knowledge and skills in food safety management;
- Practical, collaborative, effective problem-solver;
- Fluent with software such as Word, Excel, PPT and Ps.
