Executive Chef – Centralized Kitchen (Multi-Hotel Operations)
We are a hospitality group managing six hotels, each with its own restaurant, and a centralized kitchen that supplies and maintains consistent food quality across all properties. We are looking for a highly experienced and innovative Executive Chef to lead our centralized kitchen operations (located at Amnaya Resort Kuta) and ensure culinary excellence across all our restaurants.
Key Responsibilities:
· Oversee all culinary operations of the centralized kitchen, including menu development, ingredient sourcing, and food production.
· Maintain consistent food quality and presentation across all six hotel restaurants.
· Collaborate with restaurant chefs and managers to ensure seamless food service and menu execution.
· Develop and implement standard operating procedures (SOPs) for efficient food production and delivery from the central kitchen to each hotel.
· Lead, train, and manage kitchen staff in both the central kitchen and hotel outlets to ensure skill development and adherence to company standards.
· Control food costs by managing inventory, optimizing portion sizes, and minimizing waste.
· Maintain health, safety, and hygiene standards in compliance with regulations.
· Innovate and introduce new menu items while staying current with industry trends.
· Collaborate with the procurement team to source high-quality ingredients at competitive prices.
· Work closely with the hotel management team to ensure that guest satisfaction levels are met and exceeded.
Requirements:
· Proven experience as an Executive Chef, preferably in a multi-property or centralized kitchen setting.
· Strong leadership skills with the ability to manage multiple teams across different locations.
· In-depth knowledge of kitchen management, food costing, and inventory control.
· Creativity and passion for developing new recipes and innovative menus.
· Exceptional organizational skills and attention to detail.
· Ability to work under pressure in a fast-paced environment.
· Strong communication skills and the ability to collaborate effectively with teams at all levels.
· Degree or certification in Culinary Arts or related field is preferred.
