Executive Chef - Trendy Restaurant (Canggu)

The ideal candidate for the Executive Chef position will have extensive experience managing kitchen staff and swiftly resolving any kitchen issues that arise. This role requires someone who can effectively attract, retain, and motivate kitchen staff, ensuring a collaborative and productive team environment. They will be responsible for training staff on new recipes, cooking techniques, and equipment usage, as well as overseeing food preparation and the delivery of food supplies. Additionally, they will prepare special dishes and supervise overall kitchen operations during dinner service. Success in this role demands a focus on delivering high-quality, cost-effective dishes promptly. The top candidates will be creative, service-oriented, and maintain composure under pressure.
Requirement :
- Open for local and expat candidates.
- In-depth knowledge of the F&B industry.
- Minimum 2 years of culinary education or relevant education background for the position.
- Minimum of 3+ years of experience in a similar position.
- Good communication skills in English, both spoken and written.
- Strong leadership skills with excellent communication and interpersonal skills.
- Discipline, able to work in a team or individually.
- Advanced knowledge of food professional principles and practices.
- Proficient in human resources management, including staff training, scheduling, and performance evaluations.
- Excellent knowledge of Back of House (BOH) systems, including ordering, inventory management, and kitchen operations.
- In-depth understanding of Food Cost of Goods Sold (COGS) and Profit & Loss (P&L) reporting.
- Excellent communication skills for effective collaboration with kitchen staff, management, and other departments.
- Ability to meet deadlines and manage multiple tasks efficiently in a fast-paced environment.
- Flexibility to work on-call, including shifts, after hours, weekends, and public holidays as required.
- Ensure promptness, freshness, and quality of all dishes served.
- Coordinate and oversee cooks' tasks to ensure smooth kitchen operations.
- Implement and enforce hygiene policies and regularly examine kitchen equipment for cleanliness.
- Design new recipes, plan menus, and select plate presentations to enhance the dining experience.
- Review staffing levels to ensure alignment with service, operational, and financial objectives.
- Hire, train, and mentor kitchen staff, including cooks, food preparation workers, and dishwashers.
- Perform administrative tasks such as taking stock of food and equipment supplies and managing purchase orders.
- Set and monitor performance standards for kitchen staff to ensure efficiency and quality.
- Obtain feedback on food and service quality, and address customer problems and complaints promptly.
