Responsible to: General Manager/Managing Director
Job Purpose:
To ensure the smooth and efficient running of the food & beverage operations and to promote a positive image to both customer and colleagues in relation to service and quality of food and beverages
Main Responsibilities:
- Day to day running of the Food & Beverage Outlets
- Take control and responsibility for the Waterfront Bar & Brasserie, L'Escale Restaurant, 52 @ The Bay and Room Service.
- Take every opportunity to maximize revenue.
- Lead a team of Managers, Assistant Managers, Food & Beverage Supervisors and Food & Beverage Assistants to ensure the highest levels of Customer Care are practiced at all times.
- To assist and carry out training as required and to document the same.
- To be responsible for the day to day queries, complaints, and issues that arise in the Bar, Brasserie & Restaurant.
- To ensure cash/vouchers and all forms of payment are handled in a secure and responsible manner.
- To deal with all complaints in a courteous and efficient manner and inform the senior manager.
- Attend the weekly Head's of Department meetings
- Assist with recruitment and selection for Food & Beverage outlets
- Assist Managers with Performance Management
- Management of Weekly Rosters
- Maintain and audit hygiene levels
- Maintain and audit food quality levels with Executive Head Chef
- To ensure that reasonable care is taken for the Health and Safety of yourself, other employees, guests and any other persons on the Hotel premises.
- To report and where possible, take action on incidents of accidents, fire, loss or damage.
- To carry out all Managerial duties as per the agreed standards.
Your normal working week will be 5 days over a 7-day roster. The weekly roster includes weekend work.
Requirements:
- A Minimum of 2 years experience at Manager level in a 4* Hotel
- Possess Strong Leadership qualities
- Excellent communication, organisation & people management skills
- Ability to train new & existing staff
- Have an excellent knowledge of Food and Beverage & a strong eye for detail
- Possess the ability to perform under pressure
- Fluent in spoken & written English
- Availability to work 5 over 7 days for both opening and closing shifts
- A strong level of HACCP
- Knowledge of Budgeting and Rostering
