About the location:
The Four Seasons Resort Mallorca is perched on the spectacular Formentor Peninsula and backed by panoramic vistas of the Mediterranean and the surrounding landscapes, the hotel was originally opened in 1929 within an expansive private estate. Currently undergoing restoration and renovation, this stunning historic property is scheduled to open its doors as a Four Seasons resort in June 2024.
Key Responsibilities:
- Develop and implement goals and strategies to elevate F&B operations and drive success across all outlets.
- Forecast staffing needs and manage associated labor costs to ensure efficient and cost-effective operation.
- Maintain continuous awareness of departmental requirements related to production, staffing, and service quality.
- Oversee scheduling and workload forecasting for restaurant, lounge, room service, and pool staff, ensuring optimal coverage and efficiency.
- Support Department Heads in developing, updating, and reviewing job descriptions to clarify roles and expectations.
- Lead initial and ongoing training programs for new and existing F&B staff, focusing on service excellence, menu knowledge, and brand standards.
- Enforce F&B standards, including performance, dress code, appearance, and sanitation, in alignment with established policies.
- Identify and recommend improvements to enhance team performance, collaboration, and overall service delivery.
- Conduct annual performance reviews with each Department Head, offering constructive feedback and setting future objectives.
- Communicate hotel policies and updates to staff regularly, ensuring team alignment and clarity on standards and expectations.
- Implement merchandising and promotional strategies tailored to guest demographics, aimed at increasing revenue and guest satisfaction.
- Ensure Department Heads maintain comprehensive menu knowledge, including preparation methods, ingredients, and wine list expertise.
- Review weekly payroll for hourly staff, ensuring accuracy and compliance with budget targets.
- Collaborate closely with the Chef and Sous-Chefs to maintain product quality, fair pricing, and prevent substandard items from being served.
- Participate actively in F&B and departmental meetings, contributing insights and action plans to achieve strategic goals.
- Review daily logs and emails from department managers to stay updated on F&B operations and address any issues proactively.
- Utilize and manage the hotel’s POS system effectively for accurate sales and cost tracking.
- Work to minimize waste throughout F&B operations, promoting sustainable practices and cost control.
- Oversee inventory management, ensuring that Department Heads maintain par stocks and adhere to established inventory processes.
- Ensure all F&B equipment remains in excellent working condition, reporting any deficiencies promptly for repair.
- Manage wine inventory, including selection, stock rotation, and maintaining an updated wine list.
- Utilize computer systems proficiently, including Lotus and Word Perfect, to manage departmental tasks and reporting.
- Review and analyze profit and loss statements, using financial data to drive F&B profitability and cost controls.
- Calculate and control beverage and food costs, ensuring alignment with budget goals and departmental objectives.
- Assist in preparing divisional budgets, including revenue and expense projections, to support financial planning.
- Handle all aspects of Human Resources within the F&B department, including interviewing, evaluating, disciplining, and terminating staff as needed.
- Address guest complaints within F&B areas effectively, continually striving to enhance guest satisfaction and service quality.
- Maintain approved purveyors and current prices for all F&B requisitions, ensuring cost-effective inventory and store management.
- Support Department Heads in providing staff training, ensuring a well-prepared and knowledgeable team.
- Develop and assess special promotions and procedures to attract guest patronage while adhering to Four Seasons policies.
- Foster effective communication channels between F&B and other operational departments to ensure seamless service.
- Ensure accurate and prompt completion of accident reports by Department Heads as required.
- Engage with upper management regularly to report on F&B progress, challenges, and opportunities.
- Respond appropriately in emergency situations, ensuring guest and employee safety.
- Perform additional tasks and projects as assigned by hotel management to support overall hotel goals.
Qualifications:
- Experience : Minimum one year as a line employee (e.g., cook, server, host) and at least one year in a managerial or assistant managerial role (e.g., Room Service, Stewarding, Banquets). Two to three years of restaurant management experience at the department head level.
- Education : College degree (4 years) in hotel/restaurant management, business administration, or a related field preferred.
- Languages : Fluent in English and spanish, with excellent reading, writing, and oral proficiency.
- Technical Skills : Strong computer skills, proficient in Lotus and Word Perfect. Knowledge of POS systems and financial analysis.
- Legal Eligibility : Must have the legal right to work in Spain
