POSITION SUMMARY
As an Ecailler, you will be responsible for expertly handling and preparing various types of shellfish, ensuring the highest standards of quality and presentation. Your duties will include the precise shucking, cleaning, and portioning of oysters, clams, and other shellfish, while accurately labeling the type, date, and destination of each product. You will also prepare and portion other seafood items as required, ensuring they are ready for cooking or serving.
In addition to your role as an Ecailler, you will be an integral part of the kitchen staff and will be required to assist in various other kitchen positions as needed. This includes preparing ingredients, cooking according to recipes, and supporting your colleagues in different stations to ensure smooth kitchen operations.
Key responsibilities include maintaining an organized and sanitary work environment, washing and disinfecting your workstation, tools, and equipment regularly. You will also monitor the quality and freshness of all shellfish, adhering strictly to food safety and company standards. Additionally, you will be required to document all safety checks, including the temperature of refrigerators, freezers, and food products, using thermostats and thermometers.
You are expected to follow all company safety and security policies, promptly reporting any maintenance needs, accidents, or unsafe work conditions to management. Maintaining a clean and professional appearance is essential, as is the ability to communicate effectively and work collaboratively with the kitchen team to meet quality and service goals.
Physical demands of the role include standing, sitting, or walking for extended periods, reaching, bending, twisting, lifting, and carrying objects up to 75 pounds. You must be able to handle and manipulate various sizes and weights of shellfish and other seafood. Additional tasks may be assigned by supervisors as needed.
Your role as an Ecailler is vital in delivering exceptional seafood quality to our customers, maintaining the highest standards of food safety, and contributing to a positive, team-oriented kitchen environment. Your flexibility in working across different kitchen positions will be key to the success of the team.


PREFERRED QUALIFICATION
Education: Technical, Trade, or Vocational School Degree.
Related Work Experience: At least 2 years of related work experience.
Supervisory Experience: No supervisory experience.
License or Certification: None
