*Job Overview*
We are seeking a Butchery Manager and Assistant to join our team in a bustling restaurant environment. The ideal candidate will have a passion for food preparation and a keen interest in the culinary arts.
*Responsibilities For The Two Roles*
- The Butchery Manager will be responsible for running the shop and meeting all regulatory requirements, including liaising with external bodies in the supply and regulatory sectors.
- Previous experience in this role is essential as is authoritative knowledge of the Meat Industry.
- Supervise all staff as appropriate.
- The rest of the responsibilities below can be carried out by both the Manager and the Assistant.
- Undertake the preparation of meat and chicken for storage, display and sale to customers.
- Cut meat into manageable portions.
- Remove bones, gristle, surplus fat, rind and other waste material.
- Cut carcass parts into chops, joints, steaks etc. for sale.
- Prepare types of meat products as directed to meet customer demand.
- Provide excellent service to customers, appear friendly and approachable.
- Cater to the needs of each individual customers by providing/serving the meat as requested.
- Keep all work area clean and safe at all times.
- Wash and dry all equipment safely and according to training given
- Use PPE wherever required
- It is also imperative that you have a good understanding of health & safety regarding the handling of all tools and equipment used in the process of preparation of this meat for sale. As well as having good knowledge and understanding of current food hygiene and safe practices in the industry.
- Maintain cleanliness and sanitation standards in the butchery area
- Assist customers with their meat selection and provide recommendations.
- Follow all safety and food handling regulations
- Follow training in food safety to ensure a high quality, food safe products are produced for our customers, ensuring health and safety processes are maintained to create a safe working environment for yourself and colleagues.
- You will have experince of using a knife or bladed machine to prepare primal for trimming, and will focus on completing tasks efficiently in order to reduce waste and downtime.
- The Assistant will assist the Head Butcher in preparing and cutting meat products
- Ensure the cleanliness and organisation of the butchery area
- Support in maintaining stock levels and inventory control
- Follow food safety standards and guidelines
- Collaborate with shop staff to meet production needs
*Experience*
- Previous experience in a similar role within a restaurant or food production setting.
- Knowledge of butchery techniques and practices.
- Understanding of food safety regulations.
- Ability to work efficiently in a fast-paced shop environment.
- Culinary qualifications or training would be advantageous.
Job Type: Full-time
Pay: £24,438.63-£41,154.84 per year
