Arla Foods Ingredients (AFI) is an independent company within the Arla Foods Group with an ambition to become the true global leader in value-added whey and milk ingredients. The position is situated in the Technology & Functionality team part of the Discover R&D department within our recently build Innovation Centre in Videbæk, close to Herning in Denmark. We base our success on a strong knowledge of milk protein chemistry, physics and an understanding of molecular functionality of dairy-based ingredients.

You set new standards for future dairy products

Due to an increasing business focus on casein as well as whey protein innovation, we would like to recruit an experienced dairy scientist ideally within the area of casein micelle and casein protein functionality. The position will either be a senior research scientist or research scientist depending on the experience level of the successful candidate. In this position the successful candidate will be expected to:

• Increase our knowledge on the effects of unit operations such as heating, filtration, concentration, evaporation and drying on casein micelle behaviour and the interaction of either authentic or re-engineered micellar structures with minerals, lipids and whey proteins in complex mixtures.
• Together with our lead scientist in protein biophysics and with input from cross functional colleagues in the business, define and execute new research within the area of casein protein.
• Deliver detailed knowledge on proteins into NPD projects
• Prioritise, plan and drive analyses of experiments in relation to implementing new methods for analysis and characterization of proteins and/or other milk components.
• Continually on the lookout for new methods that can lead to discovering undetected possibilities for profitable business.
• Build and maintain networks externally at e.g. university groups.
• Secure that our organisation has a strong external profile through presentation of results at conferences, organising visits from world leading researchers etc.

Ph D with very strong competences in dairy protein biophysics, biochemistry and functionality

You hold a Ph D in milk protein biophysics, chemistry, dairy science, food science or similar with a focus on milk protein functionality and have at least 3 years of relevant post-doctoral experience or experience from related industries in an R&D environment.

You are able to balance conducting powerful experimentation that lifts our knowledge and a more strategic approach to securing the successful implementation of our portfolio of research projects. You have a mature approach to collaborating with commercial functions and through striving to understand the needs of our business, secure a healthy alignment of research needs to commercial interest.

We expect that you have competences that include, but are not limited to:

• Milk protein biophysics, chemistry and functionality.
• Mechanistics that govern colloidal systems and emulsions.
• Classical analytical methods for characterising casein protein behaviour such as (but not limited to) rheology, advanced light scattering techniques, advanced spectroscopy, calorimetric techniques.
• A solid understanding of the effects of classical dairy unit operations on micellar integrity and milk protein structure and function.

Beyond scientific competence, to succeed in this role, you:

• are a team player, who willingly takes on board the views of others, acts as a mentor and support to scientific colleagues and has a high level of integrity and self-reflection.
• act in a responsible and independent manner and has a strong personal drive.
• are able to apply your scientific skills in a commercial setting, which often means working with ambiguity, rapid prototyping and balancing quality with speed of delivery.

You have an open mind and communication skills to get your opinion and ideas across, and it comes naturally to you to navigate within a matrix organisation, where building relations to colleagues is key. Finally, you are a competent communicator with strong English proficiency and the ability to make your field accessible to non-specialists.
