Overview:
We are seeking a talented Chef de Partie to join our culinary team in Liss Ard Estate. The Restaurant propose various dishes inspired by the West Cork landscape under the guidance of Michelin Star trained Luca Armellino.
The Chef de Partie will be responsible for a specific section of the kitchen, ensuring that dishes are prepared to the highest standards of quality and presentation. This role requires creativity, precision, and a passion for delivering exceptional dining experiences. The role is an opportunity for a Chef-de-Partie who wishes to learn new techniques from an experienced Executive Chef creating and serving dishes to our 26 bedroom hotel’s residents and local visitors.
Responsibilities:
- Food Preparation: Prepare and cook dishes according to the menu specifications and recipes, ensuring consistency and adherence to quality standards.
- Station Management: Oversee and manage a specific section of the kitchen, such as meat, fish, or pastry, ensuring all components are prepared and ready for service.
- Quality Control: Maintain high standards of food quality, taste, and presentation, conducting regular inspections of ingredients and finished dishes.
- Menu Development: Collaborate with the Head Chef and Sous Chef in developing new menu items, contributing creative ideas and expertise in fine dining cuisine.
- Team Collaboration: Work closely with other members of the kitchen team, including Sous Chefs, Commis Chefs, and Kitchen Porters, to ensure smooth operation during service.
- Training and Mentorship: Provide guidance and support to junior kitchen staff, including training on cooking techniques, presentation, and kitchen safety procedures.
- Ordering and Inventory: Assist in maintaining accurate inventory levels of food supplies and ingredients, notifying management of any shortages or discrepancies.
- Hygiene and Safety: Adhere to strict hygiene, health, and safety regulations in the kitchen, following proper food handling and sanitation procedures at all times.
- Customer Service: Occasionally interact with guests to explain menu items or accommodate special requests, maintaining a professional and friendly demeanor.
- Adaptability: Demonstrate flexibility and adaptability in a fast-paced kitchen environment, being able to handle high-pressure situations and meet deadlines during busy service periods.
- Culinary Education: Diploma or degree in Culinary Arts or a related field preferred.
- Experience: Proven experience working in traditional, fine dining restaurant or hotel, preferably with at least 2 years of experience as Chef-de-Partie and or Commis.
- Technical Skills: Strong culinary skills and knowledge of various cooking techniques, with a focus on fine dining cuisine.
- Creativity: Ability to innovate and develop new dishes while maintaining the restaurant's culinary identity and standards.
- Attention to Detail: Meticulous attention to detail in food preparation, plating, and presentation.
- Team Player: Excellent interpersonal and communication skills, with the ability to work effectively as part of a team.
- Flexibility: Willingness to work evenings, weekends, and holidays as required by the demands of the restaurant.
- Passion: Genuine passion for food and gastronomy, with a dedication to excellence in every aspect of the culinary experience.
