Resort Executive Pastry Chef - €55k
Location: County Mayo, Ireland
We are seeking a talented and experienced Executive Pastry Chef to join our team at a prestigious 5-star resort in County Mayo, Ireland. The ideal candidate will have a proven track record in a similar role within a luxury resort or comparable environment.
Key Responsibilities:
Operational Duties:
  • Implement and maintain Estate Pastry SOPs consistently.
  • Oversee efficient operations and standards in all pastry sections across F&B outlets.
  • Lead the department effectively, managing hands-on when required.
  • Collaborate with the Executive Chef, Head Chef, and colleagues daily to resolve issues and implement improvements.
  • Establish and maintain effective communication structures.
  • Conduct regular hygiene and spot checks, ensuring corrective actions are taken as necessary.
  • Continuously review and improve standards, systems, and procedures.
  • Develop and enhance the range of pastry products, ensuring they meet 5-star standards and current trends.
  • Set and enforce performance standards for the pastry team.
  • Coordinate with the Executive Head Chef/Head Chef on maintenance issues.
  • Ensure deep and regular cleaning is conducted per the cleaning schedules.
  • Maintain compliance with HACCP and other legal guidelines.
  • Implement efficient stock control and rotation systems.
  • Enhance cost controls, minimize wastage, and maintain quality.
  • Purchase supplies in line with hotel purchasing procedures to meet business demands.
  • Ensure all staff adhere to Food Safety, Fire, and Health & Safety legislation.
Product Development:
  • Continuously review and improve menu selections and product quality.
  • Stay updated on trends, techniques, and technology to deliver the highest standards.
  • Collaborate with senior chef management to elevate overall service and product standards.
Staff Development:
  • Assist in recruiting new staff.
  • Ensure effective onboarding programs for new starters.
  • Identify training needs and conduct staff training to approved standards.
  • Develop and maintain performance standards for the pastry section.
  • Create development plans for team members and maintain good communication to motivate the team.
Guest Service & Satisfaction:
  • Ensure the pastry team delivers high-quality products and attention to guests.
  • Monitor and correct staff to maintain 5-star standards.
  • Lead by example, exceeding guest expectations and providing superb service.
Cost Control:
  • Implement measures to reduce wastage and prevent losses.
  • Operate within hotel standards and procedures to control costs.
Teamwork & Behaviour:
  • Maintain a positive and supportive attitude.
  • Guide and support colleagues and new employees.
  • Treat all personnel with respect and courtesy.
  • Address situations openly and directly.
  • Contribute ideas for continuous improvement and support the management team.
Financial Responsibilities:
  • Collaborate on cost controls and product quality.
  • Operate the pastry section within budget guidelines.
  • Source new products and manage requisitioning to reduce wastage and loss.
  • Write effective staff rosters, managing holiday and lieu time efficiently.
Professional Responsibilities:
  • Present a professional appearance and attitude, adhering to uniform standards.
  • Provide high levels of guest care and anticipate needs to exceed expectations.
  • Work as a team to support other departments as needed.
  • Consistently implement departmental SOPs and procedures.
  • Maintain a positive attitude and demonstrate proficiency and organization in work practices.
