Tasks
- cleaning the work environment, kitchen equipment and reporting any special features/defects;
- independently resolve minor faults;
- (having) waste removed.
- performing preparatory work, such as washing, cutting, (pre)cooking, mixing, stirring, etc.;
- assessing the quality of products/ingredients to be used (freshness, shelf life, etc.), preparing resources;
- carrying out the preparations, monitoring/checking the quality, doneness, taste, colour, fluidity, etc. and making adjustments/additional dosages;
- preparing orders for transfer by carrying out à la minute cooking activities, portioning and garnishing;
- supervise the work of the assistant(s), give directions and instructions;
- monitor compliance with regulations in the areas of safety, occupational health and safety, HACCP and work and presentation methods (corporate identity).
- planning daily activities and ordering food and other supplies, mainly from regular suppliers, at fixed conditions;
- receiving, checking and storing ordered food and other items;
- monitoring shelf life and hygiene.
- checking and accounting for the quantities of raw materials and (semi)finished products consumed;
- providing input for the map, menus, work instructions, etc. to be implemented;
- developing/adapting recipes, making calculations, etc. and discussing alternative menus for parties;
- developing proposals in recipe instructions, etc.
- Permanent Residence in EU/EER/Switzerland
- MBO Level-3/ EQF-3/ Secondary Vocational Education Diploma
- Min. 1 year diploma in hotelmanagement or an equivalent field
- Candidate must be able to communicate in English/Dutch
