About the Role:
This position is responsible for the Banquet kitchen as well as a wide range of kitchen operations as per business needs. This is a unique, hands-on position that is suitable for someone who is excited by the planning and directing of food preparation in kitchens while motivating and supporting an exceptional team of qualified chefs and kitchen stewards. Reporting to the Executive Chef, this role is responsible for consistently delivering exceptional food experiences for our guests and staff. As a Banquets Sous Chef, this role also encompasses supporting the Executive Chef in being hands on in the kitchen, as well as administrative components to support the busy operations that includes effective rostering of employees, ordering of stock, development and costing of menus. The successful candidate will have demonstrated people management capabilities with the natural passion and desire to coach, mentor, grow and lead a diverse multicultural team.
Duties and Responsibilities:
Experience in successfully managing the kitchen operations in a hotel or similar medium sized operation
Hands on approach to running the banquet kitchen
Exceptional communication and interpersonal skills, with a natural ability to effectively communicate to a wide diverse audience
Demonstrated ability to plan, priorities and organise your varying workload
A strong understanding of food cost, wastage, budgeting and manning
Thorough understanding around kitchen hygiene practices, environmental and food safety standards
Experience in mentoring, coaching, supporting & leading a team
Maintain HACCP certification and ensure physical and administrative compliance
Ensure the kitchen is always maintained in the highest hygienic way and well presented.
Adhere to all Enterprise Agreement requirements, particularly in relation to the rostering of permanent and casual employees.
Assist with on-the-job training for new team members.
Keep up to date with the latest trends in the food service industry and work with the team to introduce new ideas regularly
Interact in a positive and professional manner with all departments in the hotel
Knowledge around food trends
Assist with the control and management of food costs in line with budget, source ingredients in accordance with the Company’s sourcing policy and control production and portions in line with agreed specifications

What we need from you
- Diploma of Hospitality Management or Cert IV in Commerical Cookery or equivalent work experience of 3 -4 years
- The ability to work in a fast-paced kitchen
- Excellent communications skills, both verbal and written
- Team Player
- Ability to work on rotating shifts across 7 days
- A proactive approach to system improvements
- Knowledge of HACCP and relevant food safety accreditation
