SENIOR PASTRY CHEF DE PARTIE - Constantia Winelands

This beautiful purpose-built modular design restaurant on one of South Africa's oldest wine farms offers stunning views of the surrounding vineyards. The modern 86-seater restaurant overlooking the southern slopes of the Constantia and Tokai Mountains offers an eclectic mix of South African cuisines magnificently plated and served with paired wines from the estate.
Pro Staff Select are in search of a SENIOR PASTRY CHEF DE PARTIE who is familiar with a wide range of desserts, artisan breads and pastries to handle daily production and service of this pastry kitchen with the help of 2 junior pastry chefs. In addition to the trendy Terrace Restaurant daily menu production, picnic baskets for maximum 30 couples will be needed over weekends in season from November to March. These gourmet lunch baskets will include several fine pastries, Nougat & Tuilles and homemade treats.
REQUIREMENTS:

Recognized professional pastry / culinary qualification
3 years industry experience within 5-star hotel or Fine Dining Pastry Environment
Extensive range of experience in BAKING, PATISSERIE and CONFECTIONERY
Stable career growth and employment record
Outgoing personality with good people skills to liaise directly with guests
Comfortable creating new desserts daily for 3 or 5 course set menu
Strong organisational, planning and administration skills
Multi-tasker, creative and innovative thinker who’s genuinely passionate about pastry production
Excellent communication skills with a positive work attitude and a strong team player
