Sous Chef – Immediate Start (Full-Time Position)
Omari Bendigo (AC & JR GROUP PTY LTD) is a fully licensed restaurant located within the stunning Bendigo Botanical Gardens. We are seeking an experienced and passionate Sous Chef to join our team, with an immediate start available. This full-time position offers a salary between $70,000 and $75,000 plus super.
As the Sous Chef, you will be integral to supporting our Head Chef in ensuring smooth kitchen operations and delivering top-quality dishes for our breakfast, lunch, and dinner services, as well as our event and catering offerings. Your experience, dedication, and creativity will help drive our culinary standards forward.
Key Responsibilities:
Menu Development & Execution:

• Assist in developing and updating menus, ensuring a creative balance between variety and cost-effectiveness.
• Take part in the preparation and cooking of dishes, ensuring consistency, presentation, and quality.
• Prioritize the use of fresh, local, and seasonal ingredients in all dishes.

Kitchen Operations:

• Support the Head Chef in managing daily kitchen operations, ensuring seamless service and timely food preparation.
• Help monitor food and labour costs, contributing to the achievement of budget targets.
• Ensure strict adherence to health, safety, and hygiene regulations, maintaining a clean and compliant kitchen.

Team Leadership & Training:

• Assist in recruiting, training, and mentoring kitchen staff, promoting continuous learning and excellence in the kitchen.
• Lead by example in demonstrating cooking techniques and best practices.
• Manage kitchen schedules, ensuring staff coverage during busy periods.

Catering & Events:

• Collaborate with the events team to deliver exceptional catering services for conferences and special events.
• Assist in creating tailored event menus to meet client expectations and event themes.
• Coordinate with suppliers to ensure timely delivery of high-quality ingredients and event-specific needs.

Inventory & Supplier Relations:

• Assist in managing kitchen inventory, maintaining adequate stock levels while minimizing waste.
• Build and maintain strong relationships with suppliers to ensure high-quality ingredients at the best prices.

Quality Control & Customer Experience:

• Regularly check the quality of dishes through taste-testing and visual inspection to ensure high standards are consistently met.
• Assist in gathering customer feedback and making necessary adjustments to enhance the dining experience.

Continuous Improvement:

• Stay current with culinary trends, techniques, and best practices to keep our menu offerings innovative and exciting.
• Contribute to improvements in kitchen operations, cost management, and overall dining experience.

Qualifications & Experience:

• Diploma qualification or equivalent experience in a relevant role.
• Minimum of 2 years of experience as a Sous Chef or in a similar position.
• Strong culinary, presentation, and kitchen management skills.
• Excellent communication, time management, and organizational abilities.
