We are based in Amsterdam, Netherlands. 一石 Ikkoku is a newly opened restaurant in Amsterdam, Netherlands. Our other Japanese restaurants include 時雨 Shigure (九州前/欧州前 omakase sushi), Sushi Fanatics (Casual Tsukiji-market style sushi) and 大愚 Taigu (契約農場直送 Direct-from-farm specialty matcha)
At 一石 Ikkoku , we offer diverse authentic and high quality Japanese food to our customers in a modern space with only counter seatings. We import A5 wagyu from Miyazaki, 本マグロ Bluefin tuna from Spain, アンコウ Monkfish from Norway etc. We aim to provide the best ingredients available in Europe to support the work and development of the chef. We have also built our own ‘囲炉裏 Irori’ for Robatayaki charcoal grilling for an interactive customer experience.
We are currently working on the menu and aim to launch new course dinners in Kappou / omakase style. We are hiring staff for both handling daily operations (5-6 days a week) and progress as a team together towards the finest of the spectrum in Japanese cuisine. We welcome candidates at 料理長 Head chef level, or 副料理長 Sous-chef level with a strong passion to step up and show the beauty of Japanese cuisine to the world. Exact salary will be decided with the candidate in line with his/her skills and knowledge.
*On the other hand, we are continuously looking for 若手 料理人 young chefs who have certain experience in Japanese cuisine and are passionate about exploring the world and spreading the art and beauty of Japanese food.
We are willing to provide 渡航費 travel expense, visa application support (to Japanese nationals only) and temporary housing support (it is difficult to find a rental home in Amsterdam).
We have a flexible work schedule but the chef must be available to work on Fridays, Saturdays and Sundays. We arrange regular rotations so that everyone gets to take their own weekend off.
Job requirements:
- At least 1 year of experience in Japanese cuisine
- Prepare Japanese dishes, keep the work environment clean
- Spoken Japanese and English is required
- Humble and respect genuine Sushi and Japanese Cuisine traditions
- Knowledge of HACCP
- Flexible to work between 2 locations in Amsterdam (Andreas Bonnstraat and Ceintuurbaan)
- Have the legal rights to live and work in the Netherlands
We offer:
- Gross salary of €2200 - €5200 per month plus tips (depending on skills & experience, and type of pay structure e.g. freelancing) . Other terms are in line with market. Hours range from 30-60. Experienced ZZP will get highest rate per hour
- First contract is 6 months and will be extended if performance meets our standard.
