Carlton Bar & Steakhouse is a double storey, large bar and separate steakhouse restaurant. Our current Sous Chef has been promoted to Head Chef, and we are looking for another exceptional leader to join the team, a true second in charge, who can ensure the kitchen and team operate seamlessly in the absense of the Head Chef.
You will be enthusiastic and eager to contribute to our menu, promotions and events. A sound understanding of meat (particularly beef) if required, as it's 90% of our menu. Experience in dry aging, prepping and portioning from whole cuts would be advantageous.

To be successful in this role:

Demonstrated experience as a Sous Chef
Strong experience working with meat
Strong leadership skills with the ability to develop, support, and mentor the team
Lead the kitchen in the absence of the Head Chef
Implement and manage stock control, ordering, and checking of deliveries
Provide high quality meals in a fast-paced environment
Up-to-date with culinary trends and optimized kitchen processes
Good understanding of useful computer programs (MS Office, restaurant management software, POS)
Strong compliance focus
A commitment to achieving outstanding sales results
Ability to take direction well from Head Chef
Ability to engage with the local community
